Mochi Foods™ Mochi Malasada Recipe

- Mochi Foods™ Mochi Donut Mix: 2000 g
- Shortening: 400 g
- Vegetable Oil: 400 g
- Whole Egg: 400 g
- Water: 1000 g

- Mochi Foods™ Mochi Donut Mix: 5 lbs
- Shortening: 1 lb
- Vegetable Oil: 1 lb
- Whole Egg: 1 lb
- Water: 2 lbs 8 oz

- Shortening: 20%
- Vegetable Oil: 20%
- Whole Egg: 20%
- Water: 50%
Instructions
1. Mixing the Dough
- In a large mixing bowl, combine water, vegetable oil, shortening, and eggs.
- Gradually add the Mochi Foods™ Mochi Donut Mix.
- Using a dough hook attachment:
- Mix on low speed for 1 minute.
- Increase to high speed and mix for 3 minutes, until smooth and fully combined.
2. Frying the Mochi Malasadas
- Preheat fryer oil to 310°F (175°C).
- Using an ice cream scoop, carefully drop scoops of dough into the hot oil to form round balls.
- Fry until golden brown on all sides, about 8-10 minutes total, turning as needed for even cooking.
- Remove and drain on a wire rack.
3. Filling the Malasadas
- Once cooled slightly, use a piping bag to fill each malasada ball with custard, Nutella, or any filling of your choice.
- Toss in white cane sugar while hot (do not stack).
Serving Suggestions
- Fill with pastry cream, Nutella, fruit jam, or whipped cream.
- Coat in plain sugar or cinnamon sugar for a traditional malasada experience.
- Best enjoyed warm and fresh!
