Ingredients:

  • 1000 g MF-925 Millet Donut Mix
  • 200 g shortening
  • 200 g egg
  • 525 g ice water

Instructions:

  1. Mix the Dough:

    • Combine all ingredients in a mixing bowl.
    • Using a paddle attachment, mix at low speed for 1 minute, then scrape down the sides of the bowl.
    • Continue mixing at medium speed for an additional 3 minutes or until the dough becomes smooth.
  2. Shape the Donuts:

    • Remove the dough from the bowl and roll it out to a thickness of 1-1.3 cm.
    • Use a donut cutter (8.5 cm in diameter) to cut out the donuts. Each donut should weigh about 58-61 g.
    • Freeze the shaped donuts for 15-30 minutes to help maintain shape during frying.
  3. Fry the Donuts:

    • Preheat the oil to 180°C (350°F).
    • For submerged frying, cook the donuts for 4 minutes.
    • For open frying, cook for 6 minutes, flipping the donuts every 2 minutes until golden brown.
  4. Serve:

    • Once fried, coat the donuts with powdered sugar.
    • Let them cool and enjoy!

This recipe yields approximately 30-35 donuts, depending on the size and thickness of each donut (58-61 g per donut).
