Mochi Vegan Donut Recipe

Ingredients:
- 450g Vegan Donut Mix (Mochi Foods Vegan Donut Mix)
- 385g Ice Water (keep cold)
- 90g Vegetable Oil (neutral oil)
Method:
1. Prepare the Batter:
- In a large mixing bowl, combine the Vegan Donut Mix, ice water, and vegetable oil.
- Use a paddle attachment to blend at slow speed for 1 minute, ensuring the ingredients are well mixed.
- Scrape down the sides of the bowl, then blend at high speed for another 3.5 minutes until the batter is smooth and the temperature is between 59-64°F.
2. Preheat and Shape the Donuts:
- Preheat your oil in a fryer to 355°F.
- Place the batter in a hopper and use a pon de ring plunger.
- Turn the handle of the hopper one round to drop a 45-48g donut ring batter into the hot oil.
3. Frying the Donuts:
- Fry the donuts for 3 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
- Remove from oil and place on a rack to cool.
4. Serve:
- Allow the donuts to cool slightly before coating them with your preferred sugar powder or glaze.
- Enjoy warm for the best texture.
Pro Tips:
- Crispier Texture: For extra crispiness, you can slightly reduce the water content to 380g and increase the frying time by 30 seconds.
- Flavor Variations: Add flavors like Mochi Food's matcha powder or cocoa to the sugar coating to elevate the taste.
