Butter Mochi Recipe (8x8 Pan)

This recipe will yield about 9-12 squares of butter mochi, depending on how large you cut the pieces.
Ingredients:
- Mochi Foods Pancake/Waffle mix – 2 cups
- Water – 1/2 cup
- Whole eggs – 2 large eggs
- Unsalted butter – 1/4 cup), melted
- Salt – 1/4 teaspoon

Prepare the ingredients: In a large mixing bowl, combine the Mochi Foods pancake mix, water, eggs, melted butter, and salt.

Mix well: Stir the ingredients until you have a smooth, lump-free batter. Be careful not to over-mix to maintain the mochi's chewy texture.

Prepare the pan: Grease an 8x8 baking tray with butter or non-stick spray, or line it with parchment paper for easy removal.

Pour the batter: Pour the batter into the prepared 8x8 tray and spread it out evenly with a spatula.

Bake: Preheat your oven to 200℃ (392°F) / 180℃ (356°F). Bake for 25–30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Pro Tips:
- Pan preparation: Lining the tray with parchment paper allows for easier removal of the mochi once baked.
- Texture preference: For a softer, more custard-like center, bake for slightly less time, around 25 minutes. If you prefer a firmer, more cake-like texture, extend the baking time to 30-32 minutes.
- Optional toppings: You can sprinkle some black sesame seeds or shredded coconut on top before baking for added flavor and texture.
- Cool before cutting: Let the mochi cool for about 10-15 minutes before cutting it into squares to allow the texture to set properly.
