Meyer Lemon Cookies

INGREDIENTS

  • 12 tbsp butter, unsalted, softened
  • 2/3 cups sugar, granulated
  • Grated zest of 2 Meyer lemons
  • 1 tsp vanilla
  • 1 lg egg at room temp
  • 2 1/2 Meyer lemon, juiced & strained
  • 2 cups Mochi Foods GF Pancake Mix
  • 1/4 tsp salt

PROCESS:

  1. Pre heat oven to 350° F
  2. Beat the first 4 ingredients for 3 minutes with a handheld mixer. Add the egg and incorporate; follow with the lemon juice.
  3. Fold in the Pancake Mix slowly, with a spatula.
  4. Scoop the batter in 1 tbsp portions about 2 inches apart on to a parchment lined baking sheet.
  5. Bake until lightly golden about 12 to 15 minutes on lower shelf of the oven.
  6. They will get harder as they cool, so do not remove from pan until they have cooled down completely.
