Gluten-Free Mochi Souffle Pancakes

Ingredients: 

¾ cup Mochi Foods GF Mochi Pancake/Waffle Mix

¼ cup milk

⅛ cup oil

1-2 large eggs

Instructions:

1. Combine egg yolks, oil, milk, and the pancake mix.

2. In a separate bowl, beat the egg whites until they form stiff peaks.

3. Gently fold the egg whites into the batter with a whisk without breaking the air bubbles.

4. Pile up the batter vertically on a thoroughly preheated greased pan. Cook slow, on a low heat, covered with a lid. Feel free to add a drop of water to create some steam in the pan.

5. After a few minutes, add another scoop of batter on top of each pancake. Make sure to stack high, add more water to create steam.

6. Once the bottoms are nicely browned, gently flip over, and cook on the other side. (4-6 min on each side on average)
